BBQ Chicken Pizza by Porter Health System

Diabetic Recipe

Yield: 4 servings

  • 1 tube of reduced fat croissant rolls
  • 4 Tbsp BBQ sauce
  • 6 ounces skinless, boneless chicken breast, cooked and diced
  • 1 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 medium red onion, chopped
  • 3 green onions, chopped
  • 1/2 green bell pepper, chopped
  • 2 Tbsp light ranch dressing
  • 1 cup reduced fat cheddar cheese

Preheat oven to 275 degrees.

Spray a baking sheet with cooking spray. Lay croissant rolls out flat on baking sheet. Bake for about 10 minutes and remove from oven.

Turn oven up to 350 degrees.

Spread BBQ sauce over croissant rolls. Sprinkle chicken, chili powder, cumin, onion, and pepper. Drizzle with ranch dressing and sprinkle cheese over top.

Bake for 15-20 minutes or until the cheese becomes bubbly.
