Looking for a quality wine selection at an affordable price? Wine enthusiasts need search no further than William B’s Steakhouse at Blue Chip Casino, Hotel & Spa in Michigan City. William B’s has received the Wine Spectator Award of Excellence for 2020, given to recognize a well-curated list of quality selections that will satisfy discerning wine enthusiasts.
With 365,000 wine ratings and its magazine and website reaching three million readers with each issue, Wine Spectator is considered to be the world’s most influential source of wine information. This is the fifth year that Blue Chip’s William B’s has received its Award of Excellence.
“Some of my favorite selections to include on William B’s Steakhouse Master Wine list are quality wines at a value,” said Patrick Cullars, Restaurant and Beverage Manager and Sommelier at Blue Chip. “William B’s now offers a selection of 105 wines from California as well as Spain, France, Italy, and South America.”
To start off dinner at Blue Chip right, Cullars encourages guests to break out the bubbly and indulge in one of their champagnes or sparkling wines. The LaMarca Prosecco DOC is a sparkling wine from Veneto, Italy. Its flavor blend of green apple, honeydew melon, pear, and cream pairs well with William B’s Seared Ora King Salmon and can be enjoyed for just $29 a bottle.
“I like to suggest a champagne or a sparkling wine to start off the dining experience,” Cullers said. “Please don’t save the bubbles for New Year’s Eve. They are a perfect way to start off your meal.”
In December, Cullars will complete his 15th year at Blue Chip. His years of experience in the industry has led to a vast knowledge base he now uses to create a quality dining experience for guests, each wine selected with care to accentuate the flavors of every meal.
“I have some hidden gems on the wine list,” Cullers said. “I like to suggest to my guests that they come back and ask for them on their next visit.”
Among these hidden gems are Blue Chip’s Beringer Knights Valley Cabernet Sauvignon from Sonoma, California, Justin Cabernet Sauvignon from Paso Robles, California, and DeLille Cellars “D2” from Columbia Valley, Washington priced at $36, $40, and $53 a bottle respectively.
No matter what dish you’re in the mood for, William B’s has a wine that will satisfy. If seafood is what you’re craving, try the White Haven Marlborough.”
“This sauvignon blanc pairs well with William B’s yellow perch with brown butter caper sauce, and has hints of gooseberry, honeydew melon, grapefruit, guava, Asian pear, and passion fruit,” Cullars said. “Try a glass for $9 or take home a bottle for $29.”
French onion soup fans will delight in the experience of sipping the crisp yellow apple, quince, pear, honey, and chamomile flavors of William B’s Michel Picard Vouvray Loire between each spoonful. This Chenin Blanc from France can be enjoyed for $9 a glass or $26 a bottle.
For those wanting to enjoy William B’s Sage Seared Pork Rib Chop or a Classic Prime New York Strip Steak, Cullars recommends the Chateau Ste. Michelle, a merlot from Indian Wells, Washington, or the Louis Martini Selection, a Cabernet Sauvignon from Sonoma, California. Each can be enjoyed for $9 a glass, and $32 and $29 a bottle respectively.
“The Chateau Ste. Michelle pairs very well with our rib chop and has notes of cherry, plum, dried herbs, vanilla, and chocolate, while the Louis Martini Selection presents flavors of black cherry, black current, cedar, baking spices, and graphite,” Cullars said. “These and more quality wines at a value are available at William B’s bar and William B’s Dining Room.”
