Low Fat Blueberry Muffins by Porter Health System

Everyone loves blueberry muffins. These have half the fat and calories of store-bought reduced fat muffins and are an easy breakfast recipe that’s good for your family.

Heart Healthy

Yield: 12 muffins

  • 2 cups flour
  • 1 cup sugar
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups fresh or frozen blueberries
  • 2 eggs
  • 1/2 cup 2% milk
  • 1/2 cup applesauce
  • 3 Tbsp vegetable oil
  • 12 baking cups

Preheat oven to 350 degrees.

Mix flour, sugar, baking powder, and salt. Add blueberries.

In a small bowl, beat eggs, milk, applesauce and oil. Fold into flour mixture using a rubber spatula until moist. Do not overmix.

Line a muffin tin with baking cups. Pour batter into cups. (For rounded tops, leave cups 1/2 full. For flat tops, fill 3/4 full.)

Bake until golden, about 25 minutes.
