Diabetic Recipe - Heart Healthy Recipe - Gluten Free Recipe
Yield: 8 servings (1/4 cup each)
- 1 1/2 cups tomatoes, seeded and diced
- 1/4 cup red onion, diced
- 2 jalapenos, seeded and diced small
- 2 garlic cloves, minced
- juice of 2 limes
- 2 Tbsp chopped cilantro (optional)
- 1/4 tsp salt
- freshly ground black pepper to taste
Add all ingredients together in a bowl, allow flavors to mix in refrigerator for at least one hour before serving. Serve with assorted whole grain tortilla chips or use as a topping to your favorite Mexican dish or even a salad.
