Fillet? Sirloin? Ribeye? If these terms look foreign to you while you’re scrolling through the steak selection of Kelsey’s menu, use this quick guide to see what these cuts of beef mean and where they’re located.

Kelseys steak cuts 2017Delmonico Ribeye - Located near the ribs. As the name implies, it's the center best portion of the rib steak, without the bone. This boneless steak is rich, tender, juicy and full-flavored, with generous marbling throughout. Also available with the bone in at Kelsey’s

Prime Rib - Also located in the rib section. Rich flavor, juicy tenderness, and majestic appearance. The grand champion of beef roasts. One of the most tender beef cuts. Fine-grained with generous marbling throughout.

Ground Sirloin - Located on the lower back. Versatile, flavorful and economical. Ideal for recipes calling for browned, crumbled ground beef, such as chili, tacos and spaghetti sauce. Kelsey’s serves Angus Beef ground sirloin, with mushrooms or onions.

Filet Mignon - Taken from the smaller end of the tenderloin. The tenderloin is the most tender cut of beef and is also arguably the most desirable. Lean yet succulent and elegant. Melt-in-your-mouth texture, subtle flavor and compact shape.

Porterhouse - This cut looks similar to the T-bone and is taken from the same short loin area. It’s a well-marbled classic steakhouse cut that consists of two tender steaks - the strip and tenderloin - connected by a telltale T-shaped bone. It’s two steak cuts in one!

New York Strip - Also called the strip steak. This cut is located in the loin area. It is a premium lean steak, known for its marbling, tenderness, and flavor.

Top Sirloin - This cut is from the loin area. It’s a lean steak that is versatile, juicy, tender and flavorful.

The world of steaks is wide and can be intimidating. The best thing to do is just dive in and try one. First, find what you look for in a steak. If you want a thick, juicy cut, try the fillet mignon.
