Strawberry Cake by Porter Health System

Serve this moist sweet cake to your friends who love strawberries. Each healthy slice is loaded with fresh strawberries and is full of vitamin C.

Diabetic Recipe - Heart Healthy Recipe

Yield: 14 Servings

Cake:

  • reduced sugar white or vanilla cake mix
  • 4 egg whites
  • 1 cup strawberries, pureed
  • 1/4 cup water
  • 1/3 cup olive oil
  • 3/4 cup strawberries, chopped

Icing:

  • 8 oz light cream cheese
  • 6 oz fat free strawberry yogurt
  • 3/4 cup confectioners’ sugar

Preheat oven to 350°. Whisk together first five ingredients until smooth. Add in chopped strawberries. Coat two 9-inch round cake pans with cooking spray. Spread batter in cake pans.

Bake approximately 30 minutes.

While the cake is baking, use a mixer to combine cream cheese, strawberry yogurt and confectioners’ sugar together until it no longer has lumps.

Once cake has cooled, spread icing over top of cake and serve.
